Fluffy Cake Recipe with Orange and Green Anise

PREPARATION
For the cake
Preheat oven to 200 °
Mix the ointment butter and the sugar with the pinch of salt. The mixture
must whiten. Add anise seeds, mix. Add whole eggs
and mix.
Add the grated rind of the 3 oranges.
Sift the flour with the yeast and pour over the previous mixture. Well
mix to obtain a smooth paste.
Squeeze two oranges and add the juice. Mix well.
Butter and flour the savarin mold. Pour the dough and tap lightly
to distribute well. Bake for 25 minutes. Let cool before
unmold.

For syrup and finishes
Prepare a syrup by mixing the juice of the third orange with the icing sugar
(You can heat a little to facilitate mixing).
Cut the last orange into thin slices. Melt 30g icing sugar
in a pan and add the slices of oranges. Confer for 8 minutes.
Peel the grapefruit raw and lift the supremes above a small bowl
to recover the juice.
pour this juice over the slices of oranges in the pan. Remove from fire.
Unmold the cake on a rack. Pour the syrup over when the cake
is still a bit lukewarm. Open the passion fruit in half and collect the
seeds.
Place the cake on a serving platter.
Decorate with candied orange slices and grapefruit supremes.
Arrange the passion seeds around.

For training
Serve on a nice cake dish with a little whipped cream.

Ice sugar: 30 g
Fruit (s) of passion: 1 piece (s)
Grapefruit (s) pink (s): 1 piece (s)
