- First cover a baking sheet with parchment paper and preheat the oven to 180 degrees.
- Put the eggs, sugar and oil in a mixing bowl and beat well until frothy.
- Sieve the flour with the baking powder and stir into the mixture. Then mix in the salt and lemon peel and finally stir in the seltzer water (= sparkling mineral water).
- Now spread the dough on the prepared baking tray and bake the cake in the preheated oven for about 20 minutes until light brown.
