Italian women’s kisses (Baci di Dama)

Finely chop the hazelnuts with the sugar in the food processor. Grate the peel of the orange. Knead the butter, flour, salt, orange zest, vanilla sugar and hazelnut sugar mixture into a smooth dough. Cover the dough with plastic wrap and let it rest for an hour in the refrigerator.
Preheat the oven to 160 ° C and prepare a baking tray with parchment paper. Remove the dough from the refrigerator and turn balls of the size of a cherry. Place the balls about one and a half centimeters apart on the baking sheet. Bake the cookies until golden brown in about 16 minutes and let cool.
Melt the chocolate au bain-marie and stir in the butter. Spoon the chocolate in a piping bag. Pipe the chocolate paste on the flat side of a cookie and press another cookie with the flat side against it. Let the cookies harden slightly before serving.
