recipe preparation
- First, carefully separate the eggs and whip the egg whites in a bowl until they become stiff.
- Mix the egg yolks with the sugar in a separate bowl until frothy, then gradually add the mineral water.
- Mix the baking powder with the flour and carefully fold into the egg mixture – ideally with a whisk.
- Finally, carefully stir the egg whites into the dough mixture.
- Then preheat the oven to 200 degrees (hot air) and line a baking sheet with baking paper.
- Then spread the dough evenly on the baking sheet and bake in the preheated oven for about 12 minutes until it is lightly browned.
- In the meantime, sprinkle a clean kitchen towel with powdered sugar.
- Then take the roulade out of the oven, turn it out onto the prepared kitchen towel and carefully peel off the baking paper. Now put the baking paper back on the baked dough and roll everything up well with the tea towel.
- Let the roulade cool down a little, then carefully open it, spread the jam and roll it up one last time (without a kitchen towel).
- Now cut the roulade into pieces, roll it up a little and decorate the snails with a chocolate bar and sugar eyes (so that the eyes stay well, it is best to use some soft chocolate to stick on).
